California Fuyu Persimmons
Fuyu persimmons can be eaten fresh, added raw to cold dishes, or added to roasts, sauces, jams and jellies. They can be sliced and used as a topping for pizza, pies, tarts, yogurt, and toast. Cooked down and pureed, Fuyu can be used to make persimmon cakes, bread, puddings, ice cream, and pie filling.
Low in fat, high in fiber, persimmons are the perfect sweetener for a green smoothie.They are also a great source of Vitamins A and C, high in beta carotene and lycopene, manganese, potassium, and copper.
When ripe, Fuyu persimmons contain layers of flavor, reminiscent of pear, dates and brown sugar with a hint of cinnamon. Their texture varies from crisp and succulent when young, to a tender and gelatinous texture as they mature.
